- Direct cooking
For searing meat, you place the meat on the grill directly over the hot coals. This method is particularly suitable for quick cooking meat.
- Indirect cooking
The indirect method is ideal for slow cooking, steaming or baking. Food is placed on the grid over the closed portion of the funnel and is therefore protected from the direct flame. The food is cooked by the heated air with the lid closed. This method is especially good for large pieces of meat that need to be cooked slowly or to bake.
